Description

Here’s an Eggs-cellent twist on my classic Gluten Free & Vegan Rice Cereal Treats… Use a variety of ingredients & shapes to come up with your own Allergy Friendly fun for Easter.


Ingredients

Optional Ingredients & Decorative Ideas:

  • Chocolate Chips
  • Nuts or Seeds
  • Nut or Seed Butter
  • Frosting
  • Candies
  • Egg Decorating Kits

Instructions

  1. Grease the Plastic Eggs or Molds with Butter Alternative.
  2. In a medium bowl, measure out the Rice Cereal or Popcorn and set-aside while you prepare the Marshmallow Mixture (see directions for Microwave & Stovetop below).
  3. Once your Marshmallow Mixture is ready, pour over Rice Cereal or Popcorn & begin mixing gently with your spatula until all cereal is coated evenly.  You can add any optional ingredients at this point – but be aware that chocolate chips or candies may melt while the temp is still hot.
  4. Press the coated cereal/popcorn into your prepared molds. You may want to grease your fingers or spatula to make this step less ‘sticky.’
  5. Let the mixture cool completely & ‘set-up’ before serving.  This step takes about 10 minutes, but can be sped up by placing it in the fridge for 3-5 minutes.
  6. Decorate if desired & Enjoy!

Microwave Directions:

  1. In microwave safe bowl, melt Butter & Marshmallows for approximately 1 1/2 – 2 minutes on high. Stirring every 30 seconds with a spatula until Marshmallows are completely melted & appear ‘puffy’.  

Stovetop Directions:

  1. In medium saucepan, melt Butter & Marshmallows over Medium Heat. Stir regularly with a spatula until Marshmallows are completely melted and appear ‘puffy’.  Do not let the mixture burn.

Notes

Storage: Store in airtight container for 2-3 days or in the fridge for up to 1 week.
